4 Ways to Stay Happy & Energetic this Winter

Including Danielle Omar's Pumpkin Energy Bite Recipe

Sweaters and boots are back, clocks have been set back, the air is crisp, the daylight is shorter and //www.huffingtonpost.com/entry/starbucks-holiday-cups-red-relax_us_58246a97e4b0d9ce6fc0e3d4" target="_blank">Starbucks officially released their holiday red cups. I've been in denial, but I can no longer hide from it - fall and (almost winter) are officially here.

And while I can always //elitedaily.com/wellness/6-ways-basic-pumpkin-obsession-makes-healthier/1607890/" target="_blank">get down to pumpkin (call me basic) and I enjoy a good excuse to wear a sweatshirt, I am otherwise not fond of the winter months (I know //thoughtcatalog.com/kovie-biakolo/2014/12/17-emotions-only-people-who-hate-winter-experience/" target="_blank">I'm not the only one. Look I grew up in Hawaii, where summer took place all year, so can you blame me?).

If you need a little cold weather pep talk, here are 4 ways I keep my energetic pep & enjoy(ish) the cold months:

    • Stay positive - mindset is everything
    • Remember to cherish the things you do enjoy about fall/winter for me this includes: pumpkin, sweaters, boots, cooking/baking and the fact that no one will see my toe nails so I don't have to worry about faux painting them and hoping no one looks too closely...
    • Practice self-care aka getting my butt up to workout even when it's cold, spending time with loved ones, eating healthy and making sure I get enough vitamin D to make up for the limited to exposure of sunlight (although I always take advantage of moments to enjoy a little sunshine even if it's chilly!)
    • If all else fails....sweet giggling babies and puppy videos. I mean need I say more?

Since I have a big sweet tooth (and we all know the fall and winter are filled with cookies and temptations) I asked Danielle Omar, Cal-EZ's RD for a good fall/winter recommendation to curb my sweet craving, give this working mom some energy on the go, satiate my love of pumpkin, and of course include an extra boost of vitamin D over the winter months. Of course she NEVER disappoints - these pumpkin energy bites are heaven. So we figured we'd share the love. You're welcome friends. And as always, thanks Danielle!

Pumpkin Energy Bites | Recipe by Danielle Omar, RD

img_050110 Medjool dates

1 cup Rice Krispies

1/2 cup peanuts, crushed

1/3 cup pumpkin puree

1/3 cup raw cashews

1 Tbsp natural peanut butter

1/2 tsp vanilla powder or extract

1 Tbsp real maple syrup

2 Tbsp cacao nibs (or 1 Tbsp cocoa powder)

1 packet Cal-EZ powder

For Coating

1 tsp brown sugar

1/2 tsp pumpkin pie spice

1/4 cup Rice Krispies

Make the coating first by pulsing the ingredients together until flour-like. Place in a small bowl and set aside. To the food processor add the dates, cashews, peanuts, and cocoa nibs together and blend well. Once pretty smooth and not too crunchy, add vanilla, Cal-EZ powder, pumpkin, peanut butter, and maple syrup. Once well combined, remove from food processor and place in a bowl. Stir in Rice Krispies. Roll mixture into balls and then coat the balls with the topping. Do this by just dropping each ball into the ball and coating.

Store in the fridge and enjoy!
